Hawaiian Toast

  1. Heat oven to 400u0b0F. Heat oil in a pan and cook the pork on each side for about 2 minutes. Season with salt and pepper then set aside.
  2. Add the carrots to the pan and saute for about 3 minutes. Stir in the apricots and almonds and cook for another 3 minutes. Season with salt and pepper, stir in the jam to heat through then remove from the heat.
  3. Place the slices of bread on a lined baking sheet. Top with the pork and apricot mixture. Sprinkle with cheese and bake for about 12-15 minutes. Serve with a sprinkling of chopped parsley.
