Hawaiian Toast
- 2 tablespoons oil
- 4 pork steaks about 4 oz each
- 7 ounces carrots halved length-ways and thinly sliced
- 10 ounces apricots pitted and diced
- 3 ounces almonds coarsely chopped
- 2 tablespoons apricot jam
- 4 slices white bread
- 5 ounces gouda grated
- 5 stems parsley chopped
- Heat oven to 400u0b0F. Heat oil in a pan and cook the pork on each side for about 2 minutes. Season with salt and pepper then set aside.
- Add the carrots to the pan and saute for about 3 minutes. Stir in the apricots and almonds and cook for another 3 minutes. Season with salt and pepper, stir in the jam to heat through then remove from the heat.
- Place the slices of bread on a lined baking sheet. Top with the pork and apricot mixture. Sprinkle with cheese and bake for about 12-15 minutes. Serve with a sprinkling of chopped parsley.
