Chicken Dressing

  1. Boil whole chicken (if not using broth).
  2. Make large skillet of cornbread; don't let get real brown, just until done.
  3. In large bowl, mix onion, celery, 2 slices of loaf bread, 1 tablespoon shortening, seasoning and 2 cups broth and let set until it is all moist.
  4. Crumble cornbread in bowl, stirring constantly.
  5. Add eggs fast so as not to cook with cornbread.
  6. Add a little bread at a time.
  7. Taste before bread is added to oven.
  8. Add salt and pepper. Add margarine to pan mixture.
  9. Bake at 500u0b0 in preheated oven until brown.
