Chicken Dressing
- 1 medium onion
- chopped green onion
- celery, chopped
- 3 eggs
- 1 skillet cornbread
- 2 slices loaf bread
- 3 c. (No. 2 can) chicken broth
- 1 Tbsp. shortening (size of egg)
- 1 1/2 tsp. poultry seasoning
- salt
- Boil whole chicken (if not using broth).
- Make large skillet of cornbread; don't let get real brown, just until done.
- In large bowl, mix onion, celery, 2 slices of loaf bread, 1 tablespoon shortening, seasoning and 2 cups broth and let set until it is all moist.
- Crumble cornbread in bowl, stirring constantly.
- Add eggs fast so as not to cook with cornbread.
- Add a little bread at a time.
- Taste before bread is added to oven.
- Add salt and pepper. Add margarine to pan mixture.
- Bake at 500u0b0 in preheated oven until brown.
