Nordic Pepper Pot
- 10 ounces lean beef cut into pieces
- 10 ounces pork cut into pieces
- 10 ounces lamb lean, cut into pieces
- 2 leeks sliced
- 9 ounces carrots peeled and sliced
- 15 black peppercorns crushed
- 15 peppercorns allspice, crushed
- 3 cloves garlic crushed
- 5 bay leaves
- 3 cups vegetable stock
- 1 2/3 pounds potatoes peeled and thinly sliced
- parsley for garnish
- Preheat oven to 325u0b0F. Put the meat, leeks and carrots into a greased baking dish. Add the peppercorns, allspice, garlic and bay leaf. Season with salt and pepper and pour over the stock. Mix well, cover and bake for about 2 1/2 hours, basting regularly.
- After 1 1/2 hours of cooking, remove form the oven and layer the potatoes on top. Season with salt and pepper and return to the oven, uncovered, for the final hour of cooking. Serve with a garnish of parsley.
