Rice Burgers

  1. Boil the rice in salted water, when half cooked, add the peas.
  2. When the rice is cooked, remove from heat, pass through a sieve, and wash with cold water to completely remove the gum from the rice.
  3. In a frying pan, heat a little olive oil, add onion, pepper, and paella spice, and mix well. If you do not have the paella spice, use the saffron so the rice turns yellow.
  4. Add the tomatoes, and let brown. If the mixture is too dry, add 1 tablespoon of water at a time, until the sauce is moist enough.
  5. In a bowl, mix the rice and the sauce.
  6. Add the eggs, one by one.
  7. Add the flour.
  8. Then shape small balls, and fry in a non-sticking frying pan with a little margarine. When browned on one side, turn over very carefully to brown the other side.
  9. Remove from pan, garnish with fresh parsley.
  10. Serve with a yogurt sauce and a small salad.
