Rice Burgers
- 6 servings
- 1 1/3 cups rice World, Oriente Paella, or Paella rice
- 1 7/8 cups frozen peas
- olive oil to taste
- 1 onion small
- 2 teaspoons spice paella, or saffron
- 2 tomatoes chopped
- 1/4 red pepper
- salt to taste
- ground black pepper
- 2 eggs
- 4 tablespoons flour
- margarine to taste
- fresh parsley to taste
- Boil the rice in salted water, when half cooked, add the peas.
- When the rice is cooked, remove from heat, pass through a sieve, and wash with cold water to completely remove the gum from the rice.
- In a frying pan, heat a little olive oil, add onion, pepper, and paella spice, and mix well. If you do not have the paella spice, use the saffron so the rice turns yellow.
- Add the tomatoes, and let brown. If the mixture is too dry, add 1 tablespoon of water at a time, until the sauce is moist enough.
- In a bowl, mix the rice and the sauce.
- Add the eggs, one by one.
- Add the flour.
- Then shape small balls, and fry in a non-sticking frying pan with a little margarine. When browned on one side, turn over very carefully to brown the other side.
- Remove from pan, garnish with fresh parsley.
- Serve with a yogurt sauce and a small salad.
