Apricot Crumble
- 500 grams apricots
- 1 tablespoon brandy
- 2 tablespoons sugar caster
- 1 teaspoon golden syrup
- 1 teaspoon cinnamon ground
- 1 teaspoon lemon juice
- 1 cup water
- 1 cup flour self-raising
- 100 grams unsalted butter
- 3 tablespoons coconut
- 2 tablespoons brown sugar
- 1 tablespoon almonds ground
- Split apricots in half, discard stone and place in a buttered pie dish with sugar, treacle, brandy, lemon juice, water, cinnamon.
- *TOPPING:Rub butter into flour until mixture is crumbly, add brown sugar, almonds and coconut. Mix to a crumbly consistency.
- Sprinkle mixture evenly over apricots.
- Bake about 1/2 hour in a moderate oven (350F/190C) until lightly browned. Cooking time varies with depth of fruit and crumble.
