Tortellini With Italian Sausage & Broccoli
- 20 ounces cheese tortellini pkg fresh
- 2 broccoli crowns, cut into florets
- 1 pound sausage casing sweet italian, removed
- 6 cloves garlic sliced
- 1/4 cup olive oil
- 1 cup vegetable broth

- In a pot of boiling water cook the broccoli florets leaving them still a bit crisp (mine are over cooked to make it easier for the kiddos to eat). Remove from the water and reserve on the side.
- Cook the pasta to al dente according to the packaging.
- In a large saute pan, over medium heat, add the olive oil and saute the garlic until fragrant. Add in the sausage and using a potato masher break up into large chunks. Cook the sausage about half way.
- Add the broccoli and the broth and simmer for about 10 minutes. Place into large serving bowl.
- Toss in the pasta. Season with salt and pepper.
