Ground Beef Stir Fry With Basmati Rice
- 7 ounces basmati rice
- 2 tablespoons oil
- 1/3 cup cashews
- 1 pound ground beef
- 1 onion minced
- 2 cloves garlic minced
- 10 1/2 ounces carrots peeled, halved lengthwise, sliced
- 3/4 cup vegetable stock
- 1 pound french green beans cut into chunks
- 1 2/3 cups plain yogurt
- 1/2 lemon
- 1 tablespoon juice
- paprika to taste
- ground cumin to taste
- 1/4 cup fresh mint leaves roughly chopped, a little set aside for garnish
- Cook rice in boiling salted water according to package instructions. Drain.
- Meanwhile, heat 1 tbsp oil in a large saucepan. Fry cashews until golden brown. Set aside. Add ground beef to oil and brown until crumbly. Season. Set aside. Wipe out pan. Add remaining oil. Sweat onion, garlic and carrots until softened. Add stock and simmer for 5 mins. Add green beans, cover and simmer for 10 mins.
- For the yogurt dip, mix together yogurt, lemon zest and lemon juice. Season and add paprika, to taste. Set aside.
- Add rice to vegetables along with ground beef. Season and add paprika and cumin to taste. Add mint and cashews. Spoon into serving bowls, garnish with mint and serve with yogurt dip.
