Beef And Ginger Stir Fry
- 1 tablespoon olive oil
- 1 pound ground beef
- 1/3 pound oyster mushrooms quartered
- 1 carrot peeled and cut into matchsticks
- 2 onions sping, trimmed and sliced diagonally
- 2/3 inch ginger peeled and finely chopped
- 1 stalk lemongrass outer leaves removed, bashed and chopped
- 8 ounces bamboo shoots in water, drained, liquid reserved
- 1 2/3 cups vegetable stock
- 6 tablespoons soy sauce
- 1 tablespoon cornstarch mixed to a paste with 2 tbsp water
- basmati rice to serve
- Heat oil in a large wok or frying pan, add ground beef and stir-fry for 6-8 mins until browned and cooked through, stirring occasionally. Remove with a slotted spoon and set aside. Add mushrooms, carrot, spring onions, ginger, lemongrass and bamboo shoots and stir-fry for 5-7 mins. Add stock, reserved bamboo liquid, soy sauce and cornstarch slurry. Return ground beef to the pan and simmer for 3-4 mins. Season to taste and serve with basmati rice.
