Fresh Strawberry Cake
- 1 stick butter (1/2 c.)
- 1/3 c. shortening
- 1 3/4 c. sugar
- 1/2 c. sliced, fresh strawberries or drained, chopped frozen strawberries
- 1 (6 oz.) pkg. strawberry-flavored gelatin
- 2 2/3 c. all-purpose flour
- 3 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1 1/3 c. milk
- 1 tsp. vanilla extract
- 4 egg whites
- Cream the butter, shortening and sugar until fluffy.
- Add strawberries and gelatin; beat well.
- Combine dry ingredients and add alternately with milk.
- Add vanilla; beat well.
- Fold in egg whites.
- Turn into 3 lightly greased and floured 8-inch cake pans. Bake at 350u0b0 for 30 to 35 minutes.
- Frost with strawberry frosting.
- Yields three 8-inch layers.
