Chicken, Broccoli And Cauliflower Bake
- 1 head broccoli cut into florets
- 1/2 head cauliflower cut into florets
- 4 tablespoons butter
- 1/3 cup all purpose flour
- 3 cups milk
- 1 pound cooked chicken shredded
- 1 1/4 cups cheddar cheese shredded
- 2 tablespoons fresh breadcrumbs
- 1/4 cup Parmesan grated
- 2 teaspoons lemon juice
- 1 teaspoon grated lemon zest finely
- salad to serve, if desired
- Preheat oven to 350u0b0F. Lightly grease 6 individual ovenproof dishes (or a 10 cup casserole dish).
- Cook broccoli and cauliflower in a large pot of boiling water for 4-5 mins or until just tender. Drain well.
- Meanwhile, melt butter in a large saucepan. Add flour. Cook, stirring, for 1 min. Remove from heat. Gradually blend in milk. Return to heat. Cook, stirring, until sauce boils and thickens. Simmer for 3 mins. Remove from heat.
- Stir vegetables, chicken and cheddar into the sauce and season to taste with salt and pepper. Spoon into prepared dishes.
- Combine remaining ingredients in a small bowl. Sprinkle over chicken mixture. Bake for 20-25 mins until golden and crisp. Serve with salad, if desired.
