Chestnut Flour Crepes With Tangerine Curd

  1. In a medium bowl, mix eggs, sugar, flour and gradually add the milk.
  2. Let sit for 30 minutes.
  3. In a frying pan, melt a little butter and cook the crepes. Set aside.
  4. In microwavable bowl, combine the juice, sugar, eggs, and cornstarch, whisk until well incorporated.
  5. Microwave for 1 minute, stir with a fork. Return to microwave and keep cooking, checking consistency every minute. Add the butter and stir well. Let cool.
  6. Fill crepes with lemon curd, sprinkle with confectioner's sugar.
