Chestnut Flour Crepes With Tangerine Curd
- 3 eggs
- 2 tablespoons sugar
- 1 cup flour
- 2 1/2 ounces chestnut flour
- milk 60 cl.
- tangerine juice 10 cl.
- lemon juice 5 cl. of
- 3/4 cup granulated sugar
- 3 eggs
- 1 tablespoon cornstarch
- 2 1/8 tablespoons butter
- confectioner's sugar
- In a medium bowl, mix eggs, sugar, flour and gradually add the milk.
- Let sit for 30 minutes.
- In a frying pan, melt a little butter and cook the crepes. Set aside.
- In microwavable bowl, combine the juice, sugar, eggs, and cornstarch, whisk until well incorporated.
- Microwave for 1 minute, stir with a fork. Return to microwave and keep cooking, checking consistency every minute. Add the butter and stir well. Let cool.
- Fill crepes with lemon curd, sprinkle with confectioner's sugar.
