Buckeyes
- 1/2 cup Skippy(R) Super Chunk(R) Peanut Butter
- 3/4 cup Country Crock(R) Spread
- 2 cups confectioners sugar
- 6 ounces semi-sweet chocolate chips about 1 cup
- Line baking sheet with waxed paper or parchment paper; set aside.
- Combine Skippy(R) Creamy Peanut Butter with 1/2 cup Spread in medium bowl until blended. Gradually stir in sugar.
- Knead peanut butter mixture on cutting board or flat surface until smooth. Shape mixture into 54 (3/4-inch) balls. Arrange balls on prepared baking sheet. Refrigerate 30 minutes.
- Meanwhile, melt chocolate with remaining 1/4 cup Spread in 1-quart saucepan over low heat, stirring occasionally.
- Dip balls into chocolate using 2 forks, covering 2/3 of ball and leaving one side exposed to resemble buckeyes. Return to baking sheet.
- Refrigerate 1 hour or until firm. Store in tightly covered container in refrigerator.
