Chocolate Chip Pudding Cookies
- 2 1/4 c. flour
- 1 tsp. baking soda
- 1 c. butter or margarine, softened
- 1/4 c. granulated sugar
- 3/4 c. firmly packed light brown sugar
- 1 (3 1/2 oz.) pkg. instant chocolate pudding
- 1 tsp. vanilla
- 2 eggs
- 1 (12 oz.) pkg. chocolate chips
- 1 c. broken nuts (optional)
- Preheat oven to 375u0b0.
- Mix flour with baking soda.
- Combine butter, the sugars, pudding mix and vanilla in a large bowl.
- Beat until smooth and creamed.
- Beat in eggs.
- Gradually add flour mixture, then stir in chips and nuts (batter will be stiff).
- Drop by rounded teaspoonfuls onto ungreased baking sheet, about 2 inches apart.
- Bake for 8 to 10 minutes (may not appear to be done).
- Makes about 7 dozen cookies.
