Chicken Breasts With Mediterranean Marinade
- 7 ounces roasted red peppers drained
- 2 1/4 ounces pitted olives sliced ripe, drained
- 1 cup Wish-Bone Italian Dressing or wish-bone robusto italian dressing
- 1 teaspoon dri oregano leaves, crush
- 2 1/2 pounds boneless skinless chicken breast halves
- For marinade, puree red peppers and olives in blender. Blend red pepper mixture, Wish-Bone(R) Italian Dressing and oregano in small bowl. Pour 1 cup marinade over chicken in large, shallow nonaluminum baking dish or plastic bag; turn to coat. Cover, or close bag, and marinate in refrigerator, turning occasionally, 3 to 24 hours. Refrigerate remaining marinade.
- Remove chicken from marinade, discarding marinade. Grill or broil chicken, turning once and brushing frequently with refrigerated marinade, until chicken is thoroughly cooked.
