Cajun Chicken Pasta
- 1 pound rotini pasta or dried boy tie
- 1 1/2 pounds skinless boneless chicken breasts cut into 2 inch pieces
- 2 tablespoons all purpose flour
- 2 tablespoons cajun seasoning salt-free
- 1 tablespoon cooking oil
- 2 cups whipping cream
- 2 cups shredded cheddar cheese blend, 8 ounces
- 1/2 teaspoon salt
- 3 cups tomatoes diced seeded
- 1/4 cup sliced green onions
- Cook pasta according to package directions; drain. Place in a very large bowl; set aside.
- In a large resealable plastic bag combine chicken, flour, and 1 tablespoon of the Cajun seasoning. Seal bag; toss to coat. In a large skillet heat oil over medium-high heat. Add chicken; cook and stir until chicken is no longer pink. Transfer chicken to bowl with pasta.
- Grease a 9 X 13 inch baking dish; set aside. Preheat oven to 350 F. For cheese sauce, in a medium saucepan bring whipping cream just to boiling over medium heat, stirring occasionally. Remove from heat. Whick in 1 cup of the cheese, the remaining 1 tablespoon Cajun seasoning, and the salt until cheese is melted and mixture is smooth.
- Add cheese sauce, tomatoes, and the remaining 1 cup cheese to bowl with chicken and pasta; toss to combine. Transfer to prepared dish.
- Bake, covered, for 25 to 30 minutes or until heated through. Sprinkle with green onions. If desired, pass hot pepper sauce.
