Brunswick Stew
- 1 stewing chicken, cut up
- water
- 4 slices bacon
- 1/2 lb. boneless beef, cut into 3/4-inch cubes
- 1 1/4 tsp. salt
- 1 tsp. paprika
- 2 c. tomatoes
- 1 (10 oz.) pkg. lima beans
- 3 medium raw potatoes, diced
- 1 1/2 c. whole kernel corn
- seasoned salt
- pepper
- all-purpose flour
- Boil chicken in 4 cups water until tender.
- Cool and remove bones, saving the broth.
- Cut into bite size pieces.
- Dice and fry bacon; remove from skillet and brown beef and onion in the pan. Add bacon, chicken broth, salt, paprika and tomatoes.
- Simmer for 1 1/2 hours.
- Add remaining vegetables and chicken and simmer for another 30 minutes.
- Thicken with flour and add seasoning.
