Indian Pudding

  1. Scald milk in heavy saucepan.
  2. Add cornmeal, all at once. Beat vigorously with wire whisk until smooth.
  3. Raise heat, stirring constantly.
  4. Boil for 1 minute, then put heat to low and cook for 10 minutes, stirring frequently to prevent scorching. Remove from heat, stir in butter until melted, then stir in molasses, sugar, nutmeg, salt and ginger.
  5. Stir in eggs and raisins.
  6. Pour in buttered baking dish.
  7. Set baking dish in a large pan filled with 1-inch of water.
  8. Bake at 300u0b0 for 2 hours. Serve with vanilla ice cream or whipped cream.
  9. Serves 8.
