Fried Egg Burgers
- 2 tablespoons olive oil
- 1 onion small, peeled and finely chopped
- 1 pound ground beef
- 2 tablespoons oregano chopped
- 2 teaspoons worcestershire sauce
- 2 tablespoons tomato sauce plus extra, to serve
- 4 large eggs
- 4 rolls hamburger buns halved and toasted
- tomato slices
- baby lettuce leaves
- For the burger mixture, heat half the oil in a frying pan over high heat. Cook the onion for 3 mins, until softened, then cool. In a bowl, combine the cooked onion, beef, oregano and sauces. Season, then divide into four portions and shape into patties.
- Wipe the frying pan clean with a paper towel. Return to the heat with the remaining oil. Cook the patties 3-4 mins each side, until cooked through. Remove from the pan and keep warm. Fry the eggs in the same pan, as desired.
- To assemble, place a fried egg on the base of each roll and top with a burger, slices of beetroot, tomato and lettuce and some extra tomato sauce. Put the tops on and secure each burger with a toothpick, to serve.
