Quinoa Salad With Citrus Dressing
- 1 teaspoon grated orange finely
- 1/2 cup orange juice freshly squeezed
- 1/4 cup virgin olive oil extra-
- 2 1/2 tablespoons fresh lemon juice
- 1 tablespoon pure maple syrup
- 1 1/2 tablespoons shallots finely chopped
- 1 1/2 teaspoons wheat free tamari
- 1 garlic cloves peeled
- 3/4 teaspoon sea salt
- 3/4 teaspoon ground cumin
- 3/4 teaspoon ground coriander
- 1/8 teaspoon cayenne pepper
- 4 cups arugula firmly packed
- 2 cups tricolor quinoa cooked
- 15 ounces chickpeas drained and rinsed
- 1 cup English cucumber cubed, skin on
- 1/2 cup cilantro leaves firmly packed roughly chopped
- 1/2 cup toasted pine nuts
- 2 1/8 purple onion " slices, cut into half moons, plus more to taste
- 1 orange medium, peeled, pith removed, segmented, and cut into pieces
- Place all your dressing ingredients into the blender jar of the KitchenAid(R) Pro Line(R) Series Blender. Secure the lid and blend on Speed 10 for about 20 seconds until well combined. Set aside.
- In a large bowl, add your salad ingredients. Pour the dressing over the salad, toss gently to combine, and serve immediately.
