Cold Pasta Salad
- 1 can diced tomatoes
- 3 large garlic cloves
- 1 1/2 teaspoons red pepper flakes
- 1/4 cup fresh basil packed
- 1 tablespoon red wine vinegar
- 1/2 teaspoon kosher salt
- 1 pound rotini pasta cooked according to package directions
- 1 cucumber medium, chopped
- 1 red bell pepper medium, chopped
- 1 yellow bell pepper medium, chopped
- 2 cups grape tomatoes halved
- 3 scallions chopped
- 1/4 cup fresh parsley chopped
- 1/4 cup extra virgin olive oil
- 8 ounces feta cheese crumbled
- 1/2 cup pitted black olives halved
- In a food processor or blender, puree the diced tomatoes, garlic, red pepper flakes, basil, wine vinegar, and salt. Refrigerate until needed.
- Cook, drain, and cool the pasta.
- Place the chopped vegetables in a large bowl, add the olive oil and toss to combine.
- Add the pasta and dressing and toss again.
- Just before serving, add the crumbled feta and the black olives. Serve cold or at room temperature.
