Dirty Rice
- 2 Tbsp. oil
- 2 Tbsp. flour
- 1 c. chopped onion
- 1 c. chopped celery
- 1/2 c. chopped green pepper
- 2 cloves garlic, minced
- 1/2 lb. ground beef
- 1/2 lb. ground pork
- 1/2 lb. chopped chicken giblets
- 2 tsp. salt
- 3/4 tsp. pepper
- 3/4 tsp. red pepper
- 1 c. chicken broth
- 3 c. hot cooked rice
- 1 c. sliced green onion tops
- Heat oil in a Dutch oven.
- Add flour and cook until flour is deep red brown.
- Stir constantly to prevent burning.
- Add onion, celery, green pepper and garlic.
- Cook until tender.
- Stir in beef, pork, giblets, salt and pepper.
- Cook until meat is browned.
- Blend in broth.
- Cover and simmer 25 minutes.
- Stir in rice and green onions.
- Cook 5 minutes longer.
- Makes 8 servings.
