Dirty Rice

  1. Heat oil in a Dutch oven.
  2. Add flour and cook until flour is deep red brown.
  3. Stir constantly to prevent burning.
  4. Add onion, celery, green pepper and garlic.
  5. Cook until tender.
  6. Stir in beef, pork, giblets, salt and pepper.
  7. Cook until meat is browned.
  8. Blend in broth.
  9. Cover and simmer 25 minutes.
  10. Stir in rice and green onions.
  11. Cook 5 minutes longer.
  12. Makes 8 servings.
