Apple Cider Pancakes

  1. In a large bowl, mix flour, baking powder, brown sugar, salt, cinnamon, and nutmeg. Forming a well in the center of the flour mixture, pour in cider, applesauce, milk, eggs, melted butter, and vanilla. Stir and mix into flour ingredients, until combined.
  2. Heat a large griddle over medium heat and spread melted butter over it. Using about 1/3 cup per pancake, cook 2 to 3 pancakes at a time. Turn over when bubbles appear in the center and cook until golden on the other side. Repeat with remaining batter.
  3. Serve immediately. Serve with butter, maple syrup and English walnuts.
