Turmeric Cauliflower Rice
- 1 Tablespoon Avocado Oil Or Olive Oil
- 1 teaspoon Cumin Seeds
- 1 clove Garlic, Minced
- 1/2 teaspoons Green Chili, Chopped (optional)
- 1/2 teaspoons Ground Turmeric
- 1/2 cups Onion, Chopped
- 1 teaspoon Ginger, Minced
- 1/2 Tablespoons Coriander Powder
- 1 cup Carrots And Peas, Frozen (optional)
- 3 cups Riced Cauliflower, Fresh Or Frozen
- 1/4 teaspoons Garam Masala (optional)
- 1/2 Lime, Juiced
- 5 sprigs Cilantro Leaves, Chopped
- 2 Scallions, Chopped
- Set a heavy-bottomed skillet on medium high heat. Add oil and wait until it is nice and shimmery. Add cumin seeds and wait for them to sputter. Add garlic and green chili (if using). Add turmeric powder and mix.
- Add chopped onions and a pinch of salt. Salt pulls out the moisture from the onions and they cook faster. Cook for 30 seconds.
- Add ginger and cook until raw smell of ginger goes away, about 30 seconds to 1 minute. Add coriander powder and stir. If using, add frozen carrots and peas and cook for a minute or two.
- Add riced cauliflower, salt and pepper to taste. Cook uncovered for 7-8 minutes, stirring occasionally (see notes). Finish turmeric keto cauliflower rice with garam masala, a squeeze of lime and chopped cilantro and scallions.
- Serve immediately with curry, in a buddha bowl, as a side or with pretty much anything that you serve rice with.
- Notes:
- Don't cover the pan while cooking cauliflower rice. This will make the rice cook faster and it will get mushy.
- If you are on a strict keto diet, you might want to skip carrots and peas.
