Gourmet Turkey Soup
- 1/4 c. butter
- 1/4 c. chopped onion
- 1 tsp. curry powder
- 1 c. diced potatoes
- 1/2 c. diced carrots
- 1/2 c. diagonally sliced celery
- 3 c. turkey broth or chicken broth
- salt to taste
- pepper to taste
- 1/2 pkg. (10 oz.) frozen French-style green beans
- 1 1/2 c. diced cooked turkey
- 1/2 tsp. dried oregano
- 1 Tbsp. crumbled parsley
- 2/3 c. half and half
- 3 Tbsp. flour
- Melt butter in large saucepan.
- Add onions and cook until transparent.
- Stir in curry powder.
- Cook 2 minutes.
- Stir in potatoes, carrots, celery, broth, salt and pepper; bring to a boil.
- Simmer 15 minutes.
- Stir in green beans, turkey, oregano and parsley.
- Continue cooking 15 minutes or until vegetables are just tender.
- Combine milk and flour; stir in gently until well blended.
- The soup should be slightly thickened.
- Makes 6 servings.
