Keto Blueberry Quick Bread

  1. Preheat oven to 350u0b0F. Grease an 8 x 4 loaf pan with butter or cooking spray.
  2. In a large bowl, combine almond flour, salt, sweetener and baking soda. Stir in beaten eggs and melted butter. The batter will be thick.
  3. Spread batter into the greased loaf pan and press blueberries evenly into the batter. Bake in preheated oven for 40 minutes or until a toothpick comes out clean.
  4. Let cool before serving.
  5. Note: The batter is very thick so I recommend pressing the blueberries into the batter after it has been spread into the loaf pan.
