Family Secret Potato Salad
- 5 pounds Russet Potatoes, Peeled Cubed And Boiled
- 8 whole Hard Boiled Eggs, Chopped
- 8 ounces, weight Dill Relish
- 4-1/4 ounces, weight Chopped Black Olives
- 1 whole Medium Red Onion, Diced
- 1 cup Mayonnaise, Plus More If Wanted
- 1 Tablespoon Yellow Mustard
- 8 ounces, weight Sour Cream
- Salt And Pepper, to taste
- First off, we just want to dump all of the ingredients except the mayo and mustard into a big ol' bowl.
- Now, here is where you create your own family secrets. Do you like mustardy potato salad? Add more mustard. I only use 1 T. but we don't like mustardy potato salad. And, add your mayo now. I start out with one cup.
- Get to mixing. This is where it starts to look like a hot mess and you freak out that maybe you added too many ingredients. Worry not, weary one.
- Now, add some salt and pepper. Taste and continue to add until you get the right combo for you.
- After well combined, cover it and stick it in the fridge to chill off. Enjoy!
