Jumbo Chocolate-Raisin Muffins
- 2 Tbsp. butter
- 2 (1 oz.) unsweetened chocolate sq.
- 1 1/4 c. flour
- 3/4 c. sugar
- 1 tsp. baking powder
- 1 tsp. ground cinnamon
- 1/4 tsp. salt
- 2/3 c. milk
- 1 large egg
- 1 tsp. vanilla
- 1/2 c. dark raisins
- 1/2 c. semi-sweet chocolate chips
- 1/2 c. confectioners sugar
- Strawberry Butter (recipe follows)
- Heat oven to 375u0b0.
- Grease six 3-inch muffin pan cups.
- In a 1-quart saucepan over very low heat, melt butter and chocolate, stirring constantly, until blended and smooth.
- Remove from heat; set aside to cool slightly.
- In a large bowl, combine flour, sugar, baking powder, cinnamon and salt.
- In small bowl, beat milk, egg and vanilla to blend well.
- Stir in cooled chocolate mixture.
- Add milk mixture to flour mixture, stirring until just blended; stir in raisins and chocolate chips.
- Pour batter into prepared pan and bake 30 minutes until tops of muffins spring back when pressed. Serve warm or at room temperature, sprinkled with confectioners sugar accompanied with Strawberry Butter.
