Yummy Zucchini Dressing Casserole

• 4 cups Zucchini, Shredded
• 1-1/2 cup Onion, Diced Small
• 1 cup Carrot, Shredded
• 1 stick Butter, Melted, Plus 2 Tablespoons For Sauteing Vegetables
• 1 cup Sour Cream
• 1 can Cream Of Mushroom Or Cream Of Chicken Soup
• 1 box (6 Oz. Size) Stove Top
• 1 cup Cheddar Cheese, Shredded

1. Preheat oven to 350u0b0F. Grease a 9" x 13" baking dish (or spray liberally with Pam).
2. Saute zucchini, onion, and carrot in 2 tablespoons butter, until tender. Remove from heat and stir in sour cream and soup. Set aside.
3. In a medium-sized bowl, mix Stove Top with the stick of melted butter. Press half of the dressing mixture onto the bottom of the greased 9" x 13" dish.
4. Spread veggie/soup/sour cream mixture on top of the dressing mixture, and place remaining dressing mixture on top of this.
5. Garnish with the shredded cheddar cheese.
6. Bake for 35 minutes, or until bubbly and cheese begins to brown.
