Chocolate Pie Hawaiian Style
- 1 can Coconut Milk
- 1 cup Milk
- 1 cup Sugar
- 1/2 cups Cornstarch
- 1 cup Water
- 7 ounces, fluid Semi-sweet Chocolate
- 1-1/2 cup Heavy Whipping Cream
- 1/4 cups Sugar
- Chocolate Shavings For Garnish
- Ready Made Pie Shell (baked)
- 1. In a sauce pan, whisk coconut milk, milk, and 1 cup sugar until all ingredients are incorporated. Bring to a boil
- 2. In a separate bowl, dissolve cornstarch in water. Reduce the milk mixture and whisk in cornstarch mixture until thickened.
- 3. Microwave chocolate pieces for 1 minute, or until melted.
- 4. Pour half of the coconut ('haupia') mixture into a bowl, set aside. With the remaining half of haupia mixture, mix in the melted chocolate and pour into the bottom of the pie crust.
- 5. Layer the remaining coconut mixture ('haupia') on top. Cool pie in the 'fridge for at least 1 hour.
- 6. In a mixer, whip heavy cream with 1/4 cup sugar until peaks form. Layer on the chilled pie. Garnish pie with shaved chocolate.
