Chocolate Pie Hawaiian Style

  1. 1. In a sauce pan, whisk coconut milk, milk, and 1 cup sugar until all ingredients are incorporated. Bring to a boil
  2. 2. In a separate bowl, dissolve cornstarch in water. Reduce the milk mixture and whisk in cornstarch mixture until thickened.
  3. 3. Microwave chocolate pieces for 1 minute, or until melted.
  4. 4. Pour half of the coconut ('haupia') mixture into a bowl, set aside. With the remaining half of haupia mixture, mix in the melted chocolate and pour into the bottom of the pie crust.
  5. 5. Layer the remaining coconut mixture ('haupia') on top. Cool pie in the 'fridge for at least 1 hour.
  6. 6. In a mixer, whip heavy cream with 1/4 cup sugar until peaks form. Layer on the chilled pie. Garnish pie with shaved chocolate.
