Yogurt Apple Coffee Cake With Maple Drizzle
- FOR THE COFFEE CAKE:
- 1/2 cups Brown Sugar
- 2 Tablespoons Melted Butter
- 2 Tablespoons Canola Oil
- 2 whole Eggs
- 1 teaspoon Vanilla Extract
- 1 cup Greek Yogurt
- 1 cup All-purpose Flour
- 1 cup Whole Wheat Flour
- 1 teaspoon Baking Soda
- 1/2 teaspoons Salt
- 1 whole Apple, Skin On, Chopped
- 1/2 cups Freshly Squeezed Lemon Juice
- 1 Tablespoon Lemon Zest
- 1/2 cups Old Fashioned Oats
- 3 Tablespoons Granulated Sugar
- 1 teaspoon Cinnamon
- FOR THE GLAZE:
- 1 cup Greek Yogurt
- 1/2 cups Confectioners Sugar
- 1 Tablespoon Maple Syrup
- 1.treheat oven to 350u0b0F. Spray a bundt pan with cooking spray.
- 2.teat together brown sugar, butter and oil until fluffy. Add in eggs, one at a time, until fully combined. Then beat in vanilla and yogurt.
- 3.thisk together all-purpose and whole wheat flours, baking soda and salt.
- 4.tdd the flour mixture to the wet ingredients in 2 batches, making sure it is fully combined.
- 5.thop apple into 1-inch cubes. Place in small bowl, add lemon juice and zest and stir. Add apple mixture to cake batter.
- 6.tix oats, granulated sugar and cinnamon in a small bowl.
- 7.tpread half the batter into the bottom of the greased bundt pan, and then add half of the oat and sugar mixture. Repeat with remaining batter and oats.
- 8.take for 40 minutes, let cool slightly.
- 9.thisk together yogurt, confectioners sugar and maple syrup to make glaze. Add a splash of water to thin it out if needed.
- 10.tnmold the cake and place on serving dish. Drizzle with glaze.
