Tangy Microwave Cauliflower

  1. Wash cauliflower, removing all leaves.
  2. Shake but do not blot dry.
  3. Place in large casserole (1 1/2 to 2-quart), covering with lid or plastic wrap.
  4. No additional water is necessary, as cauliflower will use moisture remaining on head from washing. Microwave for 9 minutes on High.
  5. While cauliflower is heating, mix salad dressing (mayonnaise may be used) with mustard, dried onion, salt and pepper.
  6. Spoon dressing mixture over cooked cauliflower; sprinkle top with cheese and paprika.
  7. Microwave for 1 1/2 or 2 minutes on Medium-high, or until cheese is melted. Makes 4 to 6 servings.
