Tangy Microwave Cauliflower
- 1 medium head cauliflower
- 1/2 c. salad dressing
- 1 tsp. prepared mustard
- 1/2 c. shredded Cheddar cheese
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1/2 tsp. dried minced onion
- paprika
- Wash cauliflower, removing all leaves.
- Shake but do not blot dry.
- Place in large casserole (1 1/2 to 2-quart), covering with lid or plastic wrap.
- No additional water is necessary, as cauliflower will use moisture remaining on head from washing. Microwave for 9 minutes on High.
- While cauliflower is heating, mix salad dressing (mayonnaise may be used) with mustard, dried onion, salt and pepper.
- Spoon dressing mixture over cooked cauliflower; sprinkle top with cheese and paprika.
- Microwave for 1 1/2 or 2 minutes on Medium-high, or until cheese is melted. Makes 4 to 6 servings.
