Blackberry Pie
- 6 cups Fresh Blackberries
- 1-1/4 cup Granulated Sugar
- 1/4 cups Cornstarch
- 2 Tablespoons Butter, Melted
- 2 Tablespoons Fresh Lemon Juice
- 2 Tablespoons Water
- 1 Tablespoon Quick Cooking Tapioca
- 1 whole Egg White Lightly Beaten
- 1 Tablespoon Granulated Sugar
- Double Pie Crust
- Use your favorite recipe for pie crust or a store bought crust. You'll need enough for a double crust.
- Preheat oven to 400 degrees.
- Combine berries, sugar, cornstarch, butter, juice, water, and tapioca. Let stand, tossing occasionally, for 20 minutes.
- Line pie pan with 1/2 of dough recipe and spoon berry mixture into prepared pie pan. Arrange second 1/2 of dough recipe over top. Brush the top with egg white and sprinkle with sugar.
- Bake in lower third of oven on a baking sheet until crust is golden brown and filling is bubbly. 1 hour - 1 hour 10 minutes.
