Royal Bibingka

  1. Preheat oven to 350u0b0.
  2. Grease 2 round 9-inch cake pans. Pour boiling water
  3. over
  4. banana leaves; line pans with wilted leaves. In large
  5. bowl, beat eggs until light.
  6. Gradually add the
  7. 3/4 cup sugar,
  8. beating
  9. well.
  10. Sift
  11. flour
  12. and
  13. baking powder; add alternately
  14. with
  15. coconut milk to cream mixture. Pour into prepared
  16. pans.
  17. Bake for 20 minutes, then broil for 7 to 10 minutes,
  18. or until lightly browned.
  19. Brush each layer with butter; sprinkle
  20. with
  21. 1
  22. teaspoon
  23. sugar and the grated coconut.takes 16 servings.
