Mom'S Magical Muffins
- 1 box (16 oz.) bran cereal-unsweetened, any brand or style
- 2 c. granulated sugar
- 1/2 c. light brown sugar
- 5 c. all-purpose flour
- 2 Tbsp. salt
- 5 tsp. baking soda
- 1 tsp. cinnamon
- 4 eggs
- 1 quart buttermilk
- 1 c. canola oil
- 2 tsp. vanilla
- 1 c. golden raisins
- 1/2 c. finely diced, dried pineapple
- 1/2 c. sliced or slivered almonds, toasted
- Combine the cereal with the sugars, flour, salt, baking soda and cinnamon in a large mixing bowl.
- Whisk the eggs with the buttermilk, oil, and vanilla until smooth and creamy.
- Add the wet ingredients, all at once, to the dry mixture and stir by hand until just moistened.
- Fold in the raisins, dried pineapple and the toasted almonds.
- Cover tightly and store in the refrigerator.
