Rainbow Salad

  1. Wash and chop all veggies and mix in a salad bowl. Done!
  2. Top with your favorite salad dressing (we love Ken's Lite Creamy Caesar and Kraft Fat-Free Zesty Italian with this salad mix) or simply mix with some olive oil, parmesan, and lemon juice for a super light salad.
  3. (I usually include arugula in this salad mix.)
  4. Cheater Salad:
  5. I use this salad as a base to create "Cheater Salad!" I go to the local grocery store or Chick-fil-a and purchase fried chicken tenders, cut them up in the pieces, and top with the salad for a fantastic, flavorful dinner (hence, the 'cheater' as I cheated and didn't cook the chicken!). If I use chicken strips, I use the fat-free zesty Italian dressing instead of the caesar.
  6. Here in South Africa, while it's impossible to find chicken strips, Woolworth's sells really small packages of garlic and parsley croutons, which bring an amazing flavor to this salad. There are no croutons like these in the States; back home, I wouldn't use any croutons at all.
