Hula Muffins
- 2 cups All Purpose White Flour
- 1/2 cups White Sugar
- 2 teaspoons Baking Powder
- 1/2 teaspoons Salt
- 2 whole Mashed Bananas
- 2 whole Eggs
- 1/2 cups Canned Coconut Milk
- 1/4 cups Milk
- 1/2 cups Sweetened Shredded Coconut
- 2 Tablespoons All-purpose Flour
- 1/2 cups Chopped Pecans
- 2 Tablespoons Butter, Melted
- Muffin batter:
- Mix the first 4 ingredients together and set aside. Beat egg, banana, coconut milk, milk and oil. Add the banana coconut mixture to dry ingredients, take care not to over mix.
- Topping:
- Mix Coconut, Flour, Pecans, and Butter together and sprinkle over the unbaked muffins.
- Bake in oven at 375 for 17- 20 minutes, until a toothpick inserted in the center comes out clean.
