Fresh Fruit
- 2 envelopes unflavored gelatin
- 1 c. juice (orange, pineapple or white grape)
- 2 (16 oz.) cans pears, drained
- 2 Tbsp. lemon juice
- 1/2 pt. raspberries
- 3 small oranges, peeled, white pith removed, sectioned and drained
- 1 pt. strawberries, sliced
- kiwi fruit (2)
- Line an 8 x 4-inch loaf pan with plastic wrap.
- In saucepan, sprinkle gelatin over juice.
- Let stand 2 minutes, then heat to simmer.
- In blender, puree pears with lemon juice.
- Add gelatin and blend.
- Arrange raspberries in a row down each side of pan. Arrange orange slices down center, slightly overlapping.
- Pour 1/3 of gelatin over fruit.
- Now, arrange strawberries (half of them). Pour 1/3 of gelatin over.
- Repeat with strawberries and gelatin. Cover and refrigerate overnight.
- Invert on plate and garnish with kiwi.
