Surpriseburgers
- 1/2 lb. lentils (1 1/4 c.)
- 3 c. water
- 1 large onion, chopped
- 1 c. chopped carrots
- 3 c. fresh whole wheat bread crumbs
- 1 egg
- 1 tsp. garlic salt
- 1/2 tsp. oregano, crumbled
- 1/2 tsp. salt
- 3 Tbsp. butter
- 4 slices Cheddar cheese, each slice cut into triangles
- Wash lentils; add water and bring to boiling in large saucepan.
- Lower heat; cover.
- Cook 15 minutes.
- Add onion and carrots.
- Cook 15 minutes more or until lentils are very tender. Remove from heat.
- Cool slightly.
- Stir in bread crumbs, egg, garlic salt, oregano and salt.
- Melt butter in large skillet. Drop lentil mixture by rounded one-half cupfuls into hot butter. Flatten mounds into patties with spatula.
- Cook patties until firm and golden brown on both sides.
- Top each patty with 2 cheese triangles; heat until melted.
- Garnish with parsley sprigs and carrot curls, if you wish.
