Bayou Eggplant

  1. Peel eggplants.
  2. Cut in half lengthwise and hollow out insides, leaving a 3/4-inch thick wall.
  3. Combine milk with eggs to make an eggwash.
  4. Dust eggplant shells with flour.
  5. Dip in eggwash, roll in bread crumbs and deep-fry at 375u0b0 until golden brown.
