Bayou Eggplant
- 3 whole eggplants
- 1 c. milk
- 2 eggs, beaten
- 1 c. flour for dredging
- 1 c. bread crumbs
- oil for deep frying
- 2 lb. medium shrimp
- 1 1/2 Tbsp. salt
- 6 dashes Tabasco sauce
- 2 1/2 Tbsp. monosodium glutamate (m.s.g.)
- 1 1/2 Tbsp. garlic powder
- 2 c. butter, melted
- 1/2 c. flour
- 1 lb. fresh lump crab meat
- 3 shallots, finely chopped
- 6 large mushrooms, sliced
- 1/2 c. white wine
- 1 small jar oysters
- Peel eggplants.
- Cut in half lengthwise and hollow out insides, leaving a 3/4-inch thick wall.
- Combine milk with eggs to make an eggwash.
- Dust eggplant shells with flour.
- Dip in eggwash, roll in bread crumbs and deep-fry at 375u0b0 until golden brown.
