Easy Chocolate Eclair
- 2 cups Cold Milk
- 1 box French Vanilla Instant Pudding Mix (3.4 Oz Box)
- 1 tub 16 Ounce Size, Cool Whip
- 1 box Graham Crackers (14 Oz Box)
- 1 tub Milk Chocolate Flavored Frosting (16 Oz Size)
- Mix cold milk and pudding mix together in a large bowl. Refrigerate for 5 minutes while it "sets up". Then whisk in the Cool Whip.
- Line the bottom of a 9X9 casserole dish with sheets of unbroken graham crackers, overlapping some crackers if necessary to cover the entire bottom of dish.
- Pour half of the pudding mixture on top and spread evenly. Top with another layer of graham crackers, again overlapping if necessary. Spread remaining pudding mixture on top of the graham crackers. Then top that with a third and final layer of graham crackers.
- Cover with plastic wrap and refrigerate overnight to soften the crackers.
- The next day, spread frosting on top and refrigerate until ready to serve! This recipe can easily be doubled and served in a 9"X13" casserole dish.
