Paleo Crepes

  1. Mix crepe ingredients. Spray a pan with olive oil or nonstick spray and heat on medium-high. Slowly pour mix into hot pan. Swirl pan until mixture becomes a circle and covers the pan (like an omelette). Allow mix to cook for 2-3 minutes on each side. Carefully remove crepe from pan onto a plate.
  2. To assemble, spread almond butter on half of the crepe. Top with chopped bananas and blueberries. Fold like a quesadilla, then fold one side again. Pour melted dark chocolate on top.
