Cranberry Oatmeal Chocolate Chip Cookies

  1. Preheat oven to 375.
  2. Beat together butter, vanilla and brown sugar until light and fluffy. Add eggs one at a time, mixing well after each addition.
  3. Combine oats, flour, baking soda and salt in a separate mixing bowl. Add to batter in several additions, mixing well after each.
  4. Stir in cranberries and chocolate chips. Drop by rounded tablespoons onto ungreased cookie sheets.
  5. Bake for 10 minutes or until golden brown.
  6. These bake up "puffier" than regular oatmeal cookies that spread out flat, and they stay moist for days - if you can keep them in the cookie jar that long.
