White Chocolate Almond Oatmeal Cookies
- 1-1/2 cup Unsalted Butter, Softened
- 1/2 cups Dark Brown Sugar
- 1/2 cups White Sugar
- 1 whole Egg
- 1 teaspoon Vanilla Extract
- 1-1/2 cup All-purpose Flour
- 1/2 teaspoons Baking Powder
- 1/2 teaspoons Baking Soda
- 1/2 teaspoons Salt
- 3/4 cups Rolled Oats
- 1 cup White Chocolate Chips
- 1/2 cups Almonds, Chopped
- 1. Preheat oven to 350u0b0F and lightly grease 2 baking sheets.
- 2. In a medium bowl cream butter, dark brown sugar, and white sugar. Then, stir in the egg and vanilla. Set aside.
- 3. In a separate bowl, sift (or whisk together) the flour, baking powder, baking soda, and salt.
- 4. Gently incorporate dry ingredients into wet ingredients.
- 5. Add oats, white chocolate, and chopped almonds to the dough and mix until just incorporated.
- 6. Use a cookie scoop (approximately 1 Tablespoon sized) to scoop the batter onto the prepared tray. Using a scoop will help to ensure even sized cookies. Leave about 2 inches between each cookie on the sheet.
- 7. Bake or 10-12 minutes. Allow to rest 1-2 minutes on cookie sheet and then remove them from the pan and allow them to finish cooling on wire rack.
