Best Pancakes Ever
- 1-1/2 cup Flour
- 3 Tablespoons Sugar
- 4 teaspoons Baking Powder
- 1/8 teaspoons Salt
- 1 strip Allspice, Or You Favorite Spice
- 2 whole Eggs, Separated
- 1 cup Milk
- 1/4 cups Vegetable Or Canola Oil
- Pre-heat griddle to 350-375 degrees. Spray generously with cooking spray.
- Mix or sift flour, sugar, and baking powder, salt and allspice.
- In a separate bowl or measuring cup, beat egg YOLKS, milk, and oil.
- Add yolk mixture to flour mixture. Gently stir 12 times. Walk away! It's ok...just walk away!
- In a separate bowl, use an electric mixer with whisk attachment to beat egg whites until they form stiff peaks.
- GENTLY fold in egg whites into the batter in two batches, and GENTLY mix until white streaks are gone.
- Pour about 1/4 cup (more if you like huge pancakes) onto hot griddle. Cook until edges are dry; about one minute. (These pancakes do not bubble as much as other pancakes, so don't use that as a measure of done-ness). Flip and cook for another 30-60 seconds.
- Now, to make it absolutely heavenly, throw in about 1 1/2 cups mashed banana while you are GENTLY mixing. If you really want to get crazy, sprinkle some pecans on them just after you put them on the griddle. Truly amazing.
