Peach Allspice Jam

  1. Prepare 5 (1/2-pint) freezer jars according to manufacturer's instructions.
  2. Chop peaches to make 4 cups.
  3. Place peaches in strainer over glass measuring cup to drain juice and add enough apple juice to make 1 cup total.
  4. Combine juice and allspice in medium saucepan; add pectin slowly, stirring constantly to prevent lumps.
  5. Heat to boiling over medium-high heat, stirring constantly to avoid scorching.
  6. Boil and stir 1 minute.
  7. Remove saucepan from heat.
  8. Stir in peaches, sweetener and lemon juice.
  9. Fill freezer jars to within 1/2-inch of top.
  10. Wipe jar rims; cover with lids. Let stand at room temperature 4 hours.
  11. Refrigerate until chilled or place jam in freezer.
