Peach Allspice Jam
- 2 lb. ripe peaches, peeled and pitted
- unsweetened apple juice
- 1/2 tsp. ground allspice (optional)
- 1 (1 3/4 oz.) pkg. no-sugar-needed pectin
- 9 to 10 packets Equal sweetener
- 2 to 3 tsp. lemon juice
- Prepare 5 (1/2-pint) freezer jars according to manufacturer's instructions.
- Chop peaches to make 4 cups.
- Place peaches in strainer over glass measuring cup to drain juice and add enough apple juice to make 1 cup total.
- Combine juice and allspice in medium saucepan; add pectin slowly, stirring constantly to prevent lumps.
- Heat to boiling over medium-high heat, stirring constantly to avoid scorching.
- Boil and stir 1 minute.
- Remove saucepan from heat.
- Stir in peaches, sweetener and lemon juice.
- Fill freezer jars to within 1/2-inch of top.
- Wipe jar rims; cover with lids. Let stand at room temperature 4 hours.
- Refrigerate until chilled or place jam in freezer.
