Tasty Taco Soup
- 1 pound Ground Beef Or Turkey
- 1 whole Onion, Chopped
- 1 envelope Taco Seasoning
- 1 envelope Ranch Dressing Mix
- 1 can Corn
- 1 can Diced Green Chiles
- 3 cans Beans (pinto, Kidney, Black), Rinsed
- 1 can Diced Tomatoes (use A Large Can)
- Toppings, Such As Corn Chips, Cheese, Green Onions And Sour Cream
- Fry ground beef (or turkey) and onion in a large pot until cooked through.
- Add taco seasoning and ranch dressing mix, following the instructions on the taco seasoning package.
- To the meat mixture, add corn, green chiles, rinsed beans and tomatoes.
- Add water, one cup at a time, to reach your desired consistency. We like our taco soup to be relatively thick like chili, so we don't add much water.
- Bring ingredients to a boil and then reduce heat to low and allow to simmer for at least 20 minutes. (I make this a couple of hours ahead of time and let it simmer as long as possible. The smell is to die for!)
- Top individual bowls with whatever you'd like... green onions, cheese, corn chips, sour cream...
