Banana Chocolate Chip Muffins
- 1 teaspoon Vanilla Extract
- 1/4 cups Granulated Sugar
- 1 whole Egg
- 1/4 cups Vegetable Oil
- 1 cup Mashed Bananas
- 1/2 cups All Bran Cereal
- 1/2 cups All-purpose Flour
- 1/2 cups Whole Wheat Flour (if You Don't Have Whole Wheat Flour On Hand, You Can Use All-purpose Flour For It All)
- 1 teaspoon Baking Powder
- 1 teaspoon Baking Soda
- 1/2 teaspoons Salt
- 1/2 cups Chocolate Chips
- Heat the oven to 375F. Prepare muffin tins with paper liners.
- Mix the vanilla, sugar, egg, oil, bananas and All-Bran. Let stand for 5 minutes.
- In a separate bowl, stir remain ingredients, except for the chocolate chips. Add to the bran mix. Fold in chips.
- Spoon into tins.
- Bake for 20-25 minutes.
- Makes 9 large or 12 medium muffins.
