Mom’S Spudnuts
- 3-1/2 cups Milk
- 1 cup Shortening
- 1 cup Sugar
- 1 cup Mashed Potatoes
- 2 packages Yeast
- 1 cup Warm Water (105-115 Degrees)
- 4 whole Eggs, Beaten
- 1 teaspoon Vanilla
- 14 cups Flour
- 4 teaspoons Salt
- 2 teaspoons Baking Powder
- 2 pounds Powdered Sugar
- Scald milk; stir in shortening, sugar and mashed potatoes. Cool to lukewarm. Blend well.
- Sprinkle yeast over warm water and stir until yeast is dissolved. Add to milk mixture.
- Stir in beaten eggs and vanilla.
- In separate bowl, combine flour, salt and baking soda.
- Gradually add the flour- 1/2 cup at a time(13-14 cups), salt and baking powder to yeast mixture.
- Knead the dough until soft. Place in a greased bowl, cover and let rise in warm place for 1 1/2 hours.
- Roll out to 1/2 " thickness on a floured surface. Cut with doughnut cutter. Place on waxed paper, cover with a cloth and let rise in a warm place until doubled, about 30 minutes.
- Fry in 375 degree oil until brown, turning once. Drain on paper towels.
- Frost with a thin icing of powdered sugar and milk, or dip in granulated sugar.
