Blueberry Bakery Muffins
- 3 cups All-purpose Flour
- 1 cup Sugar
- 4 teaspoons Baking Powder
- 3/4 teaspoons Salt
- 3/4 cups Whole Milk
- 2/3 cups Vegetable Oil
- 2 whole Eggs
- 2 cups Frozen Blueberries
- 4 teaspoons Sugar
- Combine first 4 ingredients in a large bowl, make a well in center of dry ingredients.
- Stir together milk, oil and eggs in a bowl; add to dry ingredients, stirring just until dry ingredients are moistened.
- Fold in the frozen blueberries.
- ( Batter will be quite thick) Spoon sugar over the muffins.
- Bake at 400 degrees for 20-25 minutes or until tops are slightly browned and a toothpick comes out clean.
- Remove from pan as soon as they come come out of oven, cool on rack for 5 minutes or so.
