Sour Chickpeas
- 2 whole Onions
- 1 whole Green Chili
- 1 piece Fresh Ginger (1 Inch)
- 2 whole Lemons
- 4 whole Tomatoes
- 1 Tablespoon Ground Cumin Seeds
- 1 Tablespoon Ground Coriander Seeds
- 1 teaspoon Garam Masala
- 1/2 teaspoons Turmeric
- 2 jars Chick Peas (2 Tins)
- Mix the following together in a cup:
- 2 tbsps very finely chopped onions
- 1/2 tsp salt
- 1 finely chopped green chilli
- 1 tbsp grated ginger
- Juice of 2 lemons
- Set cup aside for the moment.
- Brown 1 1/2 finely chopped onions in a frying pan. Add 4 finely chopped tomatoes. Cook these until the tomatoes begin to break down a bit.
- Add the spices (cumin, coriander, garam masala, tumeric), stir and fry.
- Add two tins of chickpeas (with the liquid) and 2 tsps salt. Cook gently for 20 minutes until most of the liquid has evaporated.
- Stir in the ingredients from the cup.
- Delicious hot or cold. Keeps for a few days in the fridge.
