Sour Chickpeas

  1. Mix the following together in a cup:
  2. 2 tbsps very finely chopped onions
  3. 1/2 tsp salt
  4. 1 finely chopped green chilli
  5. 1 tbsp grated ginger
  6. Juice of 2 lemons
  7. Set cup aside for the moment.
  8. Brown 1 1/2 finely chopped onions in a frying pan. Add 4 finely chopped tomatoes. Cook these until the tomatoes begin to break down a bit.
  9. Add the spices (cumin, coriander, garam masala, tumeric), stir and fry.
  10. Add two tins of chickpeas (with the liquid) and 2 tsps salt. Cook gently for 20 minutes until most of the liquid has evaporated.
  11. Stir in the ingredients from the cup.
  12. Delicious hot or cold. Keeps for a few days in the fridge.
